The great Panbo Marine Electronics Blog has a good article about using Azek's PVC panel for instrument panels.

This is a PVC faced, foam cored product that can be easily worked and glued. Sounds like a nice product. The comments section of the blog has several other links that posters have added to other similar products that probably bear checking out.
