I've covered Hannu's Boatyard before, but ran across this plan and thought it worth pointing out.

This is a neat little dingy described as a "very simple 7'4" x 3'10" dinghy, made out of simple materials, using a simple construction method and just the basic tools." Sounds like just the thing.
